Job Description

Scorpios Bodrum is seeking a Head Sommelier whose primary responsibility is to ensure that our wine/beverage and cigar offerings authentically represent the unique style and philosophy of the Scorpios brand. The Sommelier will act as a guide, aiding both the team and guests in exploring the intricate world of wine and food pairings to elevate their dining experiences.

This role involves close collaboration with various teams to uphold the high standards Scorpios is renowned for. It encompasses cultivating a profound understanding of wines and Champagne within the restaurant team and working in harmony with the Purchasing Manager and the global operations team to guarantee a thoughtfully selected range of wines is consistently available.

Responsibilities

Quality and Execution Support:

• Actively contribute to and nurture a rich wine/beverage and cigar culture at Scorpios, embodying the brand's philosophy.
• Lead in enhancing the team's understanding and appreciation of nuanced wine and food pairings, leveraging extensive knowledge of wines and specialty drinks.
• Engage with guests to deliver a memorable and enchanting experience, elevating their dining encounters with expertise and enthusiasm for wine.

Operational Support:

• Assist in the creation and regular updating of the wine list, ensuring consistent alignment with Scorpios' brand image and high standards.
• Manage the daily upkeep of the beverage storeroom, overseeing optimal storage, aging rotation, and temperature control for all stock.
• Collaborate closely with the Purchasing Manager of the location and the global operations team (restaurant and wine) to ensure efficient stock management across seasons.
• Work with the Food & Beverage Manager to undertake any reasonable duties as required, aiming for a seamless and superior dining experience for all guests.
• Training sommelier team & wait staff.
• Update the day-to-day available wine stock.
• Maintain and continuously improve in wine sales and minimize cost wherever possible without compromising on quality.

Pre-Opening Experience:

• Provide essential pre-opening expertise in setting up beverage operations efficiently, focusing on the wine/beverage and cigar selections.
• Offer insights and specialized knowledge in planning the wine menu and setting up the beverage service areas during the pre-opening phase, collaborating closely with senior culinary staff and executives.

Candidate Profile

• Internal drive and willingness to work in a demanding, challenging, and fast-paced work environment.
• Strong ability and self-motivation to solve problems at work resourcefully and efficiently, whether working independently or as part of a team.
• Professional communication skills coupled with an innate teamwork mentality.

Requirements

• Experience as a Sommelier at a high-end restaurant or hotel, for at least 4 years
• Fluent in English

• Vocational training as a sommelier or substantial experience in a similar role within high-end hospitality and catering settings is required.
• Possess deep knowledge of wine, champagne, and cigars, including an awareness of the latest trends and a commitment to high quality.
• Have a creative and hands-on approach to assist in creating wine and beverage lists that resonate with the Scorpios philosophy.
• Open-minded to different cultures, friendly, approachable, and sociable with strong empathetic abilities. Excellent listening skills to comprehend and meet diverse client needs are essential.
• WSET Level 3 awards in Wines and Spirits or equivalent certification.
